The name Huixoc, which means “spring water” in the Mam dialect, was given to this beautiful farm located in the lush mountains of La Democracia, a small town in the Huehuetenango province. There are several springs on the farm that not only supply moisture during the dry season, but also provide the energy to run the coffee mill.
The region’s rich soil, adequate rainfall, and high altitude combine to create ideal conditions for producing a superior crop.
